When life gives you too many carrots, what’s the solution? You make Carrot Cake, of course! Billy has whipped up a delightful dairy-free recipe that’s bound to satisfy your sweet tooth without compromising on taste.
Here’s a sneak peek at the recipe: Ingredients:
• Olive oil – to grease the pan
• ¾ cup olive oil
• ½ cup golden syrup
• 3 eggs
• 1 tsp vanilla essence
• 1 cup Self Raising flour
• ½ cup Plain flour
• 1 tsp bicarb soda
• ½ tsp ground cinnamon
• 2 medium carrots, peeled and grated.
For the Icing:
• ½ cup pure icing sugar
• ½ tsp vanilla essence
• 250g spreadable cream cheese
Instructions:
1. Preheat your oven to 170C (150C fan forced). Grease and flour a 20cm round pan, and line with baking paper..
2. In a large bowl, sift together both flours, bicarb and cinnamon.
3. In another bowl, whisk together the brown sugar, olive oil, syrup eggs and ½ tsp vanilla.
4. Add the oil mixture to the dry ingredients and mix well with a wooden spoon.
5. Mix in your grated carrots.
6. Pour the batter into the prepared pan and bake for 40 to 50 minutes, or until a toothpick inserted into the center comes out clean.
7. Allow the cake to cool completely before frosting.
For the frosting, you can use your favourite dairy-free frosting recipe or opt for a traditional cream cheese frosting if dairy isn’t an issue for you.
